1. Raw material selection and processing
Raw material selection: Firstly, choose fresh, moderately ripe, and pest free strawberries as raw materials. These strawberries should have a good taste and nutritional value to ensure the quality of the final product.
Cleaning and slicing: Clean the selected strawberries to remove surface dirt and pesticide residues. Then, remove the stem of the strawberry and cut it into appropriate sized slices as needed for subsequent freezing and drying processes.
2. Pre freezing treatment
Pre freezing: Place the processed strawberry slices into a freezer for pre freezing treatment. The purpose of this step is to form ice crystals from the water in the strawberry, in preparation for the subsequent vacuum drying process. The temperature and time of pre freezing should be adjusted according to the variety and size of strawberries to ensure uniform formation of ice crystals and not damage the tissue structure of strawberries.
3. Vacuum drying treatment
Vacuum environment: Place the pre frozen strawberry slices into a vacuum freeze dryer. In a vacuum environment, the moisture in strawberry slices will sublime directly from the solid state to the gas state without going through the liquid stage. This step can maximize the retention of nutrients and taste in strawberries.
Drying process: In a vacuum freeze dryer, the moisture in the strawberry slices is gradually sublimated by heating and reducing pressure. This process takes a long time, usually around 2-3 days, to ensure that the moisture in the strawberry slices is completely removed.
4. Packaging and Storage
Packaging: After drying, quickly package the freeze-dried strawberries to prevent them from re absorbing moisture. The packaging material should have good sealing and barrier properties to ensure that freeze-dried strawberries remain dry and fresh during storage.
Storage: Store the packaged freeze-dried strawberries in a cool, dry, and well ventilated place to avoid moisture and spoilage. Under appropriate storage conditions, freeze-dried strawberries can maintain a longer shelf life.
